Dear Fresh Friday friends,

This week’s menu is a fantastic slow baked fish using Mahi Mahi fillets. The fish is white and boneless with a mild flavour and firm texture, perfect for baking. It’s set on sliced potatoes and braised leeks, topped with a mornay sauce and crunchy crumb crust. Accompanied by a crisp leaf salad with our Sydney Royal Champion Beetroot Finishing Vinegar.

Dessert is a Belgian dark chocolate double dipped cannoli, filled with white chocolate ricotta, very Italian and very yummy.
