Dear Fresh Friday friends,

After consulting with my long range weather forecaster last week, I could see the weather would be perfect for a special salad. So with that as a driver I have decided to make an Asian inspired, coconut poached chicken salad with mango, noodles and green herbs. It will be packed with flavour and texture, a bowl of goodness brimming with fresh herbs and topped with cashews and shallots.

This will be followed by a poached summer apricot tart with yoghurt crema.
