Dear Fresh Friday friends,
This week’s menu is focussed on a famous dish in France called “Choucroute”, after all it’s the King’s Birthday weekend so we should have something befitting a feast.
It’s a slow cooked winter meal based on a sumptuous selection of smoked pork loin, ribs, special sausages, pickled cabbage, spices including juniper and caraway, potatoes and vegetables. I am making a honey mustard sauce (not traditional) to accompany the Choucroute, along with a traditional French style mustard.
To follow, we have a beautiful sour cherry tart with lip smacking flavours and textures, a perfect way to finish.
So there you go, a wonderful winter feast to settle into on Friday or Saturday night.
